Garlic – The Key Ingredient for Cardiovascular and Gastrointestinal Health

Since ancient times, humans have turned to nature for relief from illness and daily troubles. Ancient Egyptian texts, the 3rd-century BCE Chinese medical compendium ‘The Yellow Emperor’s Inner Canon,’ and the 1700s Samuel Hahnemann homeopathic Materia Medica are based on natural clinical experience (1-4). Garlic grows by separating individual cloves from a bulb. Each clove expands in the soil to create a new bulb containing 5 to 10 cloves. In clove form, garlic is relatively odorless. Inside each cell wall of a garlic clove is an unscented molecule called aliin. When crushed or damaged, garlic cloves release alliinase, an enzyme that converts aliin to allicin, garlic’s medicinal form. Cooking uncrushed garlic destroys allicin. However, if you crush a cooked clove and let it stand for 10 minutes before using it in recipes, some of garlic’s health effects are preserved (6-7).

Products labeled as aged garlic extract (AGE) are garlic cloves incubated in ethanol and water for up to 20 months. AGEs do not contain allicin but convert their cloves to allyl sulfides, useful as a blood thinner or cholesterol-lowering agent (8).
